Andrea Wallace Growing up on a pedigree Charolais cattle farm in Louth Lincolnshire led to a love a food and local produce. My desiree is to get everybody cooking I originally trained at Leith’s School of Food and Wine successfully gaining a diploma in Food and Wine. Following my qualification, I worked in several of Leith’s different divisions gaining critical real life catering experience. Firstly, I was employed in their outside catering division, hosting events in large government houses, private functions and the famous Orient Express. After that successful appointment, I was then promoted to a restaurant based business division serving up to 1500 covers daily. This experience has given me a wide range of knowledge and practical experience to impart to students. Returning to Leith’s School of Food and Wine as a Senior Teacher, teaching year diploma courses, part time and specialist courses, I gained invaluable teaching and demonstrating experience. This role gave rise to media appearances both in TV and Radio, and at the Good Food Show. I am now a freelance cookery teacher and demonstrator, still teaching for Leith’s in their Academy Schools.
